First, these recipes are largely family recipes. I will try to attribute sources as much as possible, though some have been altered a bit from the original. Second, please excuse weird grammer and spelling. If I tried to edit everything I post, I'd never post anything. Third, some of my comments aren't for the faint of heart, since I can get kind of technical and biological about cooking and some of the ingredients. So, read at your own risk!

Egg Salad and Ceasar Salad Dressing

I'm just posting a couple of recipes I came up with and had floating around on index cards so I could find them if I needed them. So, here they are.


Non-boring Egg Salad
(this addresses my major complaint about egg salad.)

3 eggs
Onion powder to taste
Fresh ground black pepper, 1/8-1/4 tsp
Pomegranate blush balsamic vinegar
2 tsp chipotle mustard
Sriracha
Hellman's mayonnaise

Of course, now I see that the egg salad was a work in progress. Hmm. Guess I'll have to try it. My notes on the card suggested more vinegar and some hot sauce (hence the sriracha)


I've done a bit more work on the ceasar salad dressing, as you can see by the title.


Ceasar Salad Take 3

3 cloves garlic, minced or mashed
juice of 1 lemon (provided it's a juicy lemon)
1/2 cup olive oil, extra virgin (because everyone needs a few more virgins)
1 jumbo egg
1 tbsp chipotle (or otherwise extra hot) mustard
2 tsp Worcestershire sauce
1 tsp black pepper
1/2 tsp light salt
1 cup shredded parmesan

Put it all in the blender and blend until mixed. MUST STAY REFRIGERATED because of the raw egg.

Amazingly, it's almost identical to take 2, which I had lost and had to recreate. Of course, as soon as I did that, the card with the recipe put in an appearance. Apparently, doing something over, or buying it again, is a necessary precondition for the black hole these things fall into coughing them back up so I can find them.
